For a richer custard, you can add up to 3 more egg yolks. For a less-rich custard, substitute half-and-half for the heavy cream, realizing that the final texture won’t be as rich or as smooth as if using cream.
1. Heat the milk, salt, and sugar in a saucepan. Scrape the seeds from the vanilla bean into the milk with a paring knife, then add the bean pod to the milk. Cover, remove from heat, and infuse for one hour. Note: If you do not have a vanilla bean shame on you. Use an extra teaspoon of vanilla extract.
2. Reheat the mixture.
3. In a separate bowl, whisk yolks. Whisking constantly, slowly whisk about a third of the hot cream into the yolks, then whisk the yolk mixture back into the pot with the cream. Return pot to medium-low heat and gently cook until mixture is thick enough to coat the back of a spoon (about 170 degrees on an instant-read thermometer).
4. Strain through a fine-mesh sieve into a bowl. Add vanilla extract. Cool mixture to room temperature. Cover and chill at least 4 hours or overnight.
5. Churn in an ice cream machine for 25 minutes. Serve directly from the machine for soft serve, or store in freezer until needed.
