Perfect dinner with a fresh green salad.
Pour boiling water over your cashews and allow to sit for 30 minutes
In dutch oven put in 1T olive oil and add your onion, carrot and celery. Sauté for approx. 5 minutes until soft and just starting to brown. Add garlic and sauté for 1 additional minute. Add tomato paste and stir.
Take casting off the sausages and put crumbled pieces into your pan to brown. Stir occasionally.
While sausage is cooking make your 'cream'. In your high speed blender add broth, cashews (drained first do not add any soaking liquid), and nutritional yeast. Blend until smooth. Approx. 1-2 minutes.
Add the 'cream' to the pan with the sausage/veggies along with crushed tomatoes and basil. Stir to combine and allow to come to a simmer. Simmer uncovered for 30-40 minutes. Taste and salt (I added 2-3 t).
Serve with your favorite pasta and top with crushed red pepper flakes and vegan parmesan. Enjoy!
