Sam's favorite mock chicken salad
1. Drain chickpeas.
2. Pour the chickpeas in a medium bowl, and mash with a potato masher until chunky. You want them to break up but not so much that they become a paste.
3. Toss in celery, onion, dressing and seasoning and stir.
Awesome served in a wrap. Sam likes them best on sourdough with honey mustard and Dijon.
