Enjoy the end of a long workday with these easy vegan stuffed bell peppers. They are high in protein, low in carbs, and super flavorful. I used Trader Joe's Beef-less Ground beef for the stuffing
1. Preheat oven to 400 F
2. Heat 1 tbs of Hatun Fresh Basil Olive Oil in a med sauce pan over med-low heat
3. Dice 1 small yellow onion and 1 cup of white mushrooms, add to pot, and saute until tender (~12 min)
4. Mince 4 garlic cloves and desired amount of sage and rosemary (only need a small amount); add to pot and stir
5. Add 1 tbs of Hatun Fresh Basil Olive Oil, meatless ground beef, and 1/2 can of tomato sauce to pot, and lower heat to low
6. Season with salt, pepper, and garlic powder; cook for ~10 min
7. Cut tops off of 4 bell peppers, remove the seeds, and poke 4 holes at the bottom of each pepper
8. Place stuffing in the peppers and bake for 30 min or until peppers are tender
