A perfect family supper dish, this is very easy to prepare. Serve with plenty of crusty bread: Italian ciabatta is particularly good. Ask your butcher to cut the ham thickly in one pice.
Heat the oil in a deep frying pan and cook the onion and garlic for 4 minutes, or until beginning to soften.
Meanwhile, cut the ham and courgettes into strips. Set the ham aside.
Add the courgettes and peppers to the onion and cook over a medium heat for 2-3 minutes, or until beginning to soften.
Stir in the paprika, tomatoes, tomatoe puree, ham and salt and pepper. Bring to the boil and simmer gently for 15 minutes, or until the vegetables are just tender.
Reduce the heat to a low setting. Make four wells in the tomato mixture, break an egg into each and season. Cook over a gentle heat until the egg white begins to set.
Preheat the grill to hot. Sprinkle over the chees. Protect the pan handle with foil. Cook under the grill for about 5 minutes until the cheese is golden and the eggs are lightly set. Serve at once with plenty of crusty break.
