Heat oil in a large frying pan.
Dice onion and fry.
Mince garlic, add to pan and fry.
Add tomatoes, beans, salsa.
Bring to the boil and reduce to a simmer.
Once cooked add cheese until it melts. Get out a large baking tray.
Line with baking paper.
Spread out the corn chips. Cook until crisp. To serve: Place corn chips on plate. Spoon the bean mixture on top.
Top with sour cream and guacamole.
