Veggies, Rice and Cheese wrapped in Puff Pastry
1. Combine rice, vegetables, eggs, cheese, chutney and chili powder, mixing well.
2. Spoon mixture onto the edge of 3 sheets of pastry, roll up (sealing with water) and cut each roll into three.
3. Place rolls on lightly floured oven tray and brush with egg. Bake at 210 degrees Celsius for 30 minutes or until golden brown.
Add just a bit more of each ingredient and use another sheet of pastry to make 3 more rolls. The standard recipe makes some very fat rolls.
Using baking paper under the flour makes cleaning excess egg off the tray much easier.
Also, transferring the rolls to the tray can be a pain especially once cut so consider transferring the rolls in one piece then cutting on the tray. The puff pastry wrapping can help with this.
