I know... pumpkin is technically a fruit, but with it's heap of vitamin A and low sugar content- it's a veggie in my book! This is my favorite way to start my mornings. The carrot juice is sweet enough to replace any need to add sugar.
Start off by adding your carrot juice to the spinach in your high speed blender. Blend for 1-2 minutes, until spinach is liquefied. Add pumpkin puree, cinnamon and vanilla. Blend for a few seconds. Then add the coconut milk. I like to freeze mine to further chill down the drink and give it a richer feel. Blend again until mixed. If you like, add ice cubes and blend until velvety smooth. Enjoy!
