Melt butter in a large saucepan on medium heat. Add onion, cook and stir until onion is tender, about 5 minutes. Add flour, cook 1 minute or until bubbly, stirring constantly.
Stir in milk. Bring to a boil. Reduce heat to medium-low, simmer for 1 minute.
Add remaining ingredients, velveeta cheese, broccoli, and pepper. Cook until cheese is melted and soup is heated through, stirring occasionally.
Tips: Substitute frozen chopped spinach, frozen cauliflower, chopped or frozen asparagus spears, chopped instead of broccoli.
Use Your Microwave: Place onion and butter in a 2 quart microwaveable casserole dish or bowl. Microwave on high for 30 seconds to 1 minute or until the onion is tender. Add remaining ingredients and mix well. Microwave 6 to 8 minutes or until velveeta is melted an soup is heated through, stirring after 4 minutes.
Lighter Vatiaton: Save 50 calore, 6 grams of fat and 4 grams o saturated at per serving by preparing with 2% milk.
