Vietnamese Chicken Salad

Mix dressing ingredients together and set aside.
Shred chicken with a fork or mixer.
Mix chicken (cooled), carrot, cabbage, red onion, green onion, mint leaves and chilli together and add dressing. Sprinkle on peanuts.
Heat vegetable oil on high heat. Once hot, put in wonton strips until brown (they will continue to cook after). Then put shallots into oil and remove when brown. Sprinkle wonton strips and shallots on top of salad and serve immediately.
