Coffee with eggs
To make the Eggy Foam, start by gathering all the necessary ingredients. In the bowl of a stand mixer, combine the egg yolks, condensed milk, and vanilla. Use the wire whisker attachment and beat on high speed for approximately 10 minutes. The mixture should resemble cake batter rather than being overly frothy.
To check for the right consistency, take a small amount of the foam and spoon it onto the surface of a glass of water. If it floats, it has reached the desired consistency. If it sinks, continue whipping for a few more minutes until it floats.
Next, proceed to assemble the Egg Coffee. Brew your preferred coffee using your chosen method, reserving about half a cup for later use. Divide the remaining brewed coffee among 4 to 6 cups. For an extended period of warmth, you can place each cup in a small bowl of hot water.
Now, gently spoon 1 to 2 tablespoons of the whipped egg foam onto the top of each cup of coffee. Take care to distribute it evenly.
Finally, pour a bit of the reserved coffee through the foam in each cup. If desired, you can add a dusting of cocoa powder for extra flavor and decoration. Serve the Egg Coffee immediately to enjoy its unique and delicious taste.
