Rap beets in foil, place on a baking sheet and bake for 30 minutes or until crisp tender. Let cool. Un rap beets and rinse under cold running water to remove skin. Diced beets bite size peaces
Vinaigrette:
Make a day to 3 days ahead. Place raisins in a heat proof bowl. Bring vinegar to a boil. Poor vinegar over raisons. Let stand 30 minutes or until raisons are plump and liquid is cool. Transfer to food processor or blender.
Process until raisons form a dark paste. Add honey, 2 tablespoons diced beets, mustard and salt; continue processing. Gradually add oil. Transfer to a bowl or bottle. Refrigerate for 30 minutes or up to 3 days before serving.
Salad:
Combine salad greens and green onions in a large salad bowl and toss well. Add walnuts, remaining diced beets, blue cheese and diced apple.
Shake or stir vinaigrette well. Drizzle about 1/3 of the vinaigrette over salad and toss well. ( Store remaining dressing in refrigerator up to a month) Enjoy!
