Suggest a better descriptionmix together all the ingredients apart from the fruit/berries
- carefully stir through 3/4 of the fruit
- spoon the mix into greased a muffin tray (silicone is best!)
- top the muffins with the remaining fruit/berries
- bake at 180C for 25-30 minutes
- leave to cool slightly before removing

Eat fresh and still warm from the oven, refrigerate or freeze.

If previously refrigerated or frozen these muffins benefit from being warmed through slightly before serving to ‘freshen up’ the texture.

Weetabix (or any brand of wholegrain wheat cereal biscuits) are a great breakfast option – they’re a good source of fibre, low in salt and sugar, and are fortified with iron. They can be quite a messy option to serve up to little ones, so I loved the idea of making them into a muffin – the perfect portable snack or addition to a meal.

I used strawberries in this recipe, but you could use any berries or soft fruit you have to hand (fresh or frozen).

Make this recipe #eggfree by using a flax egg (3 tbsp water mixed with 1 tbsp ground flax seeds) and #vegan using alternative milk.
(Flax versions can be a little drier and may need a splash more milk - you want quite a wet mix)
