wheat berry and beet salad with celery and feta
Bring stock and garlic to boil.
Add wheat berries, reduce heat to low, cover and simmer until all liquid is absorbed and wheat berries are tender.
Remove from heat, fluff and cool.
Make Dressing: combine vinegar, mustard, salt and pepper.
Gradually whisk in olive oil until blended.
Add to wheat berrie and toss well.
Add celery, green onion and beets.
Sprinkle with feta.
