heat almond milk to 100 degrees and add yeast. Allow to proof for 5 mins. While yeast is proofing, combine flours in a bowl. In a large bowl, or kitchen aid, combine the agave, salt, and olive oil. When the yeast has been proofed, add to the bowl with the wet mix and stir in. Slowly add the flour to achieve dough. Split the bread dough evenly using a scale and form into a ball. Place each ball in a large bowl. Use a soft towel to cover each bowl, and place in a still area for an hour to rise. After the hour, pound each dough ball flat to get all of the air bubbles out, and form into a loaf. Preheat oven to 350 degrees. Spray your bread pans with olive oil spray, and place loaves in. Cover and allow to rise for another 45 to 60 minutes, or until they reach your desired height. Place in oven uncovered and bake for 30 minutes. Pull oven rack out and brush olive oil on bread tops, and bake for another 5 minutes, or until golden brown. Pull bread pans out of the oven. Let cool for a few minutes in pan, then remove and place on bakers rack to finish cooling.
