Wild Rice Soup makes a filling meal on a cold winter day-and it is surprisingly easy to prepare. Round out the meal with warm sour dough bread and a green salad.
Rinse and sort lentils, discarding any debris or blemished lentils. Place lentils in small saucepan; cover with about 3 cups water. Bring to a boil; reduce heat to low. Simmer, covered, about 5 minutes. Let stand, covered, 1 hour. Drain and rinse lentils.
Cook rice according to package directions in medium saucepan. Add lentils and remaining ingredients. Bring to a boil; reduce heat to low. Simmer, uncovered, 20 minutes. Garnish as desired.
