1. Marinade: sprinkle meat with salt and pepper, place in dutch oven, add wine, broth or water, spices, herbs, onions and garlic. No mushrooms. Cover tightly and refrigerate overnight.
2. Cook: preheat oven to 325F. Meanwhile, place Dutch oven on high heat, bring to a simmer. Cover and transfer to oven for 1 hour. Stir in Mushrooms, cover and bake for 2 to 2.5 hrs or until tender. Remove from oven, uncover, and let stand for 15 minutes.
3. Serve: transfer to cutting board, slice meat across the grain. Skim off any fat from the sauce, remove bay leaf. If desired, return sauce to stove, simmer down to desired consistency. Serve meat with sauce.
Slow-Cooker:
1. Marinade: same as above but include mushrooms and place in slow cooker liner in refrigerator.
2. Cook: set slow cooker on low for 10-12 hrs or high for 5-6 hrs.
3. Serve: same as above.
