Easy recipe.
Dissolve yeast in water in a large bowl. Let stand 2-3 minutes or until liquid begins to bubble. Add olive oil and stir.
Mix flour and salt and add to yeast. Mix until dough comes away clean. Turn out dough onto clean work surface and breiftly knead by hand.
Transfer dough to lightly oiled bowl; turn to coat. Cover with plastic wrap and leave in warm spot to rise for 30-60 minutes. Dough will gently pull from bowl when ready.
Divide dough into 4 peices, shape into balls pulling down the sides and tucking under as you work around the ball 4 or 5 times. To remove air,roll each ball under your palm until smooth and firm, about a minute. Cover with plastic wrap coated with nonstick spray and let rise another 30-60 minutes.
Press dough onto lightly floured surface. Turn the dough, pressing on its center, to gradually spread it to a 7-8" diamater circle, or roll it out to 10-12" for larger, thinner crust; press around the edge for a thicker, raised rim. Transfer to peel with cornmeal or flour dusting. Brush dough
