This German sausage salad is a wonderful addition to any small meal or "Brotzeit". You can buy it at a Biergarten, too.
Try it next to lettuce salad or on a slice of Vollkornbrot.
While you can use US "bologna" in this salad, if you can find "Fleischwurst" at the German deli or online you will have a more authentic taste.
German pickles also make a difference.
Stir the vinegar, sugar and mayonnaise together (add mustard if you are in the mood).
Mix the bologna with the pickles and onions and then fold in mayonnaise mixture.
Place in the refrigerator for several minutes to blend flavors.
Variations :
Try it with either chopped, fresh dill or parsley (about 2 tablespoons) or add pickle juice instead of vinegar and sugar.
You may also add pepper to taste.
