This is great for fighting colds and flu.
You will need a food processor for this.
Preheat the oven to Gas Mark 6.
Prepare all your veg, make sure to deseed the chillies as the soup will be to hot otherwise.
Put all the veg into 2 large roasting dishes.
Drizzle as much or as little olive oil as you like over the veg, add some fresh black pepper to if you like.
Roast the veg for 1 hour on Gas Mark 6.
Remove the veg from the oven and in batches put it into the food processor and mix it until blended together, pour the blended veg into a large pan.
Add the vegetable stock to the veg mixture and stir with a wooden spoon, if it's still a bit thick use a hand blender to blend a bit more.
Either enjoy right away or warm up later.
If the soup is still a bit spicy try adding some creme fraise to the serving.
Don't heat back up in a microwave as I'm told it gets a bit of a funny taste!!
I have made this with leeks added to the veg and it gives it a wonderful extra bit of taste.
I like this with some crusty French bread.
