Suggest a better description1. Fill a heavy cast iron pot no more than halfway with canola oil and heat to 190C.
2. In a large mixing bowl, whisk together the starches and salt. In another bowl, whisk the egg white until frothy.
3. Coat the bug tails in the egg white, then coat in the starch mixture, using your fingers to massage the starch into every crevice.
4. Squeeze the juice of half a lemon directly onto the tails, then flip the tails and squeeze the rest of the lemon onto the other side.
5. Fry the bug tails in small batches until lightly golden, about four minutes. Drain, on paper towel, then immediately season generously with salt, pepper and extra lemon.
6. Once all the tails have had their first fry, return to the oil to fry for another 60-90 seconds or until depply golden. Drain on paper towel again and hit with salt and pepper again. Place on serving plate and garnish with sliced chilli.
