Moist and just the right size for two.
Pre heat Ninja to 280 degrees. Butter and flour a Ninja loaf pan. Shred about a cup and a half of zucchini meat. Not the seeds. Skin is fine. Put it in a clean dish towel and ring out most of the liquid. Set aside. In a medium bowl mis the eggs, sugar, oil and vanilla. Stir in the flour, cinnamon, cloves, nutmeg and salt. Stir in the zucchini and flour. Scrape the batter into the prepared pan. Place on a low rack in the Ninja and bake for 35 - 40 minutes at 275 degrees. Bread is done when center reads 200 degrees on an instant read thermometer. Remove from machine and let cool.
