Preheat oven to 350 degrees. Line 2 cookie sheets with parchment paper. Set aside
In large bowl, sift together dry ingredients.
In another large bowl, cream together sugar, butter and egg until light and fluffy. Add dry ingredients, mixing well. Stir in zucchini, raisins, chips and nuts.
Form dough into balls and place onto prepared cookie sheets. Keep dough in refrigerator between cooking. Bake, one cookie sheet at a time, for 12 to 15 minutes, or until tops are light golden brown and center set. Let cool on cookie sheet for a few minutes, then transfer to a wire rack to cook completely. Makes 40 cookies (2 per serving)
