Pizza with zucchini as crust.
Heat oven to 425° and line baking sheet with tin foil or parchment. Slice zucchini lengthwise to desired thickness. Lay zucchini slices on baking sheet and top just like normal pizza. Bake for 10-15 min or until cheese is melted. You can use whatever toppings you like. These are the ones I like best.
