Lemony Lentil Soup Ingredients

2 tablespoons Olive oil 1 tablespoon Oregano
1 large Onion dices2 Bay leaves
3 Carrots diced8 cups Chicken stock
6 cloves Garlic minced2 cups Red lentils
2 teaspoons Salt 2 Lemons juiced
1 teaspoon Pepper 2 teaspoons Lemon jest
1/4 teaspoon Red chili flakes 1 cup Feta cheese crumbled
1 tablespoon Fresh rosemary 2 tablespoons Fresh dill

Instructions for Lemony Lentil Soup

Rinse lentils. Heat oil in large pot, add onions. Saute till translucent. Add carrots, garlic, salt and pepper. chilies, rosemary, oregano & bay leaves. Saute till carrots are tender. Add stock and lentils. Simmer 25 minutes. Add lemon juice & zest. Sprinkle with cheese and dill. Serve

My sister (Elizabeth) added chopped bits of chicken sausage. I added spicy Italian sausage and omitted the cheese. This is a very flexible recipe and as long as the lemon components are included it is still delicious no matter how it is seasoned [I posted this recipe.]
