Marinated Flank Steak with Lime Chipotle Glaze Ingredients
1/4 cup
Lime juice
fresh
1 teaspoon
Cumin
2 Chipotle chiles in
adobo sauce
drained
1/2 teaspoon
Salt
2 tbs
Adobo sauce
reserved from chiles
1 pound Flank
steak
trimmed
2 tbs
Honey
1
cooking spray
1
Garlic
clove
Instructions for Marinated Flank Steak with Lime Chipotle Glaze
1. Combine first 7 ingredients in a blender. Process until smooth. Pour into a plastic bag; add steak. Seal and marinate in refrigerator at least 4 hours.
2. Prepare grill
3. Remove steak from bag, reserving marinade. Pour marinade into a 2 cup glass measure; microwave at HIGH 1? minutes or until marinade boils, stirring every 30 seconds.
4. Place steak on grill rack coated with cooking spray; cover and grill 7 minutes on each side, basting frequently. Cut steak diagonally across grain into thin slices.

I recently tried this one out as part of a Southwestern dinner for guests from Japan -- with rave reviews all around. Once the guests left, I found myself returning to the leftovers (I made a 2 recipe) to snack on more, more, more. Not only would I make it again -- I AM making it again tonight. My meat was skirt steak rather than flank (is there a difference?), and I didn't realize until well into the grilling that I hadn't unfolded the long, thin cuts of meat. Whoops. Opened up the steak and grilled the other (non-marinated) side, and it was fantastic, even with my error.
