Hellenic Country Salad (Horiatiki Salata) -- Greek Ingredients

1/4 lb Dried beans 3 Firm; ripe tomatoes
Salt 1 English cucumber
1 Celery stalk 1 Green sweet pepper; seeded
1/4 lb Savoy cabbage 1 White onion; or 3 green
2 sm Boiling potatoes 1 tb Olive oil
1/4 c Drained canned plum tomatoes 1 tb White wine vinegar
2 1/2 tb Chopped onion 1 tb Lemon juice
2 Basil leaves Salt and freshly ground
1/4 ts Dried thyme 3 oz Feta cheese; broken into
2 tb Olive oil 12 Black Kalamata olives
Freshly ground black pepper 2 tb Chopped fresh oregano; or
3 oz Imported Italian pasta Romaine lettuce leaves

Instructions for Hellenic Country Salad (Horiatiki Salata) -- Greek

Cut tomatoes into wedges and then in half. Place in salad bowl. Coarsely chop cucumber, green pepper, and onion. Add to tomatoes. Combine olive oil, vinegar, and lemon juice. Season to taste with salt and pepper. Pour over vegetables. Sprinkle feta cheese, olives, and oregano over top. (If using dried oregano, rub between palms as you sprinkle on salad.) Toss well. To serve, spoon into romaine lettuce leaf-lined bowl or toss with torn romaine leaves.
