1 tbVegetable oil
1 bnSalad onions; diagonally sliced
175 gchicken; Cooked, diced; (6oz)
50 gCheddar cheese; Grated, (2oz)
25 gButter; (1oz)
2 Courgettes; diced
2 tspcajun seasoning
1 Red pepper; deseeded
2 mdWhite sweet potatoes; peeled

Sweet Potato And Cajun Chicken Hash Preparation

Bring a saucepan of lightly salted water to the boil, add the diced sweet potato and simmer for 10 minutes, until just tender. Drain. Heat the butter and oil in a frying pan. Add the cajun seasoning, onions, courgettes and pepper and cook stirring occasionally for 2-3 minutes. Stir in the sweet potato and chicken and cook for a further 5-6 minutes, until golden. Transfer to a warmed serivng plate and sprinkle over the cheese. NOTES : A cajun spiced recipe with dried sweet potatoes and chicken.
