Fresh berry crunch that provides a light fruit season delight!

1 20-oz canPineapple in juice; crushed
1 18.25-oz packageYellow cake mix
3 cupsBlueberries; fresh
1/2 cupSugar
1/2 cupButter; melted
1 cupPecans; toasted & chopped

Blueberry Crunch Preparation

Preheat oven to 350 degrees. Spread pineapple in a lightly buttered 13x9-inch baking dish. sprinkle with cake mix, then blueberries and sugar. Drizzle with melted butter and top with pecans. Bake for 45 minutes or until bubbly.

Notes

Nice blend of summer flavors! One caution: This is unexplainably rich!!! Try small servings at first. Excellent dish, though.

I made this using individual ramekins and it worked out great. Perfect for small families. I will use the balance of cake mix as a topping for fruit crumble.

I made this tonight and everyone loved it! I added less sugar, I only added 1/4 c and also I cooked mine for a few extra minuets. My family all thought it was terrific! This is a keeper!

JessiLove, I personally don't think the pineapple is intrusive and the texture and the moisture is necessary to make it work. If you try something else, post a review and let us know how it worked. You just MAY invent a new dish!!

Definitely a winner!! However, I failed to take the poster's advice about the richness of this dish and trying small portions.......Took out a little too much, so.....was forced to eat it....(picture me with a satisfied smile on my face.)
