In a medium bowl, mix oil, half the jalapeno, half the garlic and lime zest; season with salt and pepper. Fold in shrimp. Cover and refrigerate for 15 minutes up to 1 hour.
In a shallow saucepan, comine remaining jalapeno and garlic, 1 teaspoon salt, pepper, orange juice, tequila and shallots; bring to a boil over medium-high heat. Cook until mixture is thick and syrupy, 7 to 8 minutes. Stir in butter; keep warm.
Heat a gas grill on high or stove-top grill pan over high heat. Grill shrimp, turning once, until just opaque, about 4 minutes. Transfer to a serving platter; pour tequila sauce over shrimp. Garnish with chives; serve immediately with lime wedges.

lori_caillouet 1 year agoVery good and has a nice kick, we grilled the shrimp then returned them to the pan a coated them with the sauce.

TheHipster 1 year agoExcellent.... next time I make it I will enhance it by making it a tad spicier and will make the sauce more of a glaze as I thought it was a little too thin.
rj57 1 year agoTotally awesome. Tried it using a charcoal grill and Applewood chips. Also squeezed a half of lime into the tequila sauce.
Dulcedeleche 1 year agoIncredible! It goes perfectly with the rice. We used a lot more garlic, though. And we used rum instead of tequila.

Jannie111 4 years agoWOW! Can you say tasty? Easy? Yummy? The only things I changed were adding more shrimp per person, and thickening up the sauce with a bit of flour. Next time I will serve with the suggested Lime-Cilantro Rice. I marinated the full hour, fyi.
