"Delicious! Much easier than most chicken recipes I've tried, which make you cook on the stove then the oven. I added crushed lemon, garlic, fennel, and croutons mixed into the potatoes and these flavors worked nicely as well.
As one more added bonus, we took the dish we used for roasting, with the leftover juices and baked on stuff and boiled the chicken bones in it for stock, then added back in our leftover chicken with some celery and carrots for a wonderful chicken soup."

Preheat oven to 450. Spray a large roasting pan thoroughly with cooking spray. Add sliced potatoes and onions, spray with olive oil, season with salt and pepper and toss to coat. Spread in an even layer.
Lay chicken on top of vegetables. Season with salt, lemon pepper and half of paprika. Turn chicken over and season other side.
Cover pan with foil and roast chicken in upper third of oven for 20 minutes. Remove the foil and roast for another 30 minutes until chicken is cooked through and potatoes are tender.

jmesquit 7 months agoThis is awesome! I didn't have lemon pepper so I added garlic powder. No paprika added. Used drumsticks and breasts. So good, moist, tender and delicious!
LilMiizMoma 8 months agoYumm! I tried this and it came out better the second time. And I just made this with chicken breast and it was delicious! I did have to cook it a little longer and add a little more seasoning but I was so tasty!

LilMiizMoma 9 months agoSo delicious! Didn't have lemon pepper (actually I've never heard of it) so used salt, pepper, and yellow lemon juice. It was so good! Husband liked it but recommended I use more salt.

angelalaw 1 year agoGreat recipe! The only thing I do differently is took of skin of the thighs. And really coated with the lemon pepper. I also added carrots to the potatoes and used butter instead of olive oil to coat them.

WhatTheFulton 1 year agoI added other vegetables: potatoes, carrots, celery, and a dozen or so cloves of garlic. I used Papa Joe's Salt (a combination of coarse sea salt, garlic, and pepper) in combination with the lemon pepper, and I overdid all the seasonings, as I tend to do. For the chicken, I cooked 5 drumsticks and 2 breasts (on the bone). My wife and mother enjoyed it. I would cook it again and add more or different vegetables.
