5 clovesGarlic; crushed
1 cuptomatoes; seeded and diced
1 tablespoonbutter; unsalted melted
0.5 cupwhite wine
salt and pepper; to taste
2 tilapia fillets
1 tablespoonspoon olive oil

Tilapia in Garlic and Tomatoes Sauce Preparation

Preheat the iron skillet with the oil.

Roast the garlic and tomatoes. Stir in the butter and white wine and season with salt and pepper.

Place the fish fillets in the iron skillet.

Cook fish for until about halfway done. Pour the tomato sauce over it and let the wine evaporate.

Complete cooking until fish flakes easily with a fork.

Simple and easy! I used a can of diced tomatoes because I didn't have fresh ones, and added a little diced onion. Tasty!

WHAT? How do you roast tomatoes? Maybe that should be included in the recipe so people know how to do it. I put everything in the pan at the same time...sure hope it works out!! Specify next time that you have to put the tomatoes and garlic in something else before it gets added to the pan.
