Original recipe makes 4 Servings
| 1 PoundGround Beef; No More Than 85% Lean |
| 1 CanRotel Tomatoes and Green Chilies Do Not Drain |
| 1 Medium or LargeEgg |
| 1/2 CupItalian Style Bread Crumbs |
| 1/2 CupKetchup |
Mimi's Mexican Meatloaf Preparation
Preheat oven to 350. In a medium bowl mix Beef, Rotel, egg and bread crumbs thoroughly. Place meat mixture into your loaf pan and form into the pan. Top with ketchup. Bake for 1 hour and 15 minutes or until done.
Serve with mashed potatoes, green beans or stuffing and dinner rolls.
Notes
Use Bread crumbs as needed, just make sure your meat isn't too dry or too moist to ensure a good bake. This can be made ahead of time and put in the fridge until you're ready to cook.
