2 lbs ground beef
1 mediumonion; chopped
2 green peppers; chopped
2 cansdiced tomatoes; undrained
1 cantomato sauce
2 teaspoonsalt
1 teaspoonpepper
1 cuplong grain rice; (not instant)
1/4 cupbrown sugar

Slow Cooker Stuffed Pepper Soup Preparation

Brown the beef in a large skillet and drain off fat.

Place the cooked beef and the rest of the ingredients in a crock pot.

Add two (28 oz) cans of water and stir.

Cover and cook on low for 6-8 hours. If needed, stir in extra water before serving.

Sooo good!!!!!! I used barley instead of rice, beef broth instead of water, and cooked it stovetop. Other than that I followed the recipe exactly and I absolutely love it!!!!!

I used red, yellow, orange and green bell peppers. I also used ground turkey and added some fresh mushrooms. It was easy to make and tasted delicious!

Amazed at how good this simple recipe is! I am going to try trading the ground beef for chicken and adding a little cumin and paprika and turn it into Fajita soup! Thank you

I made a half batch of this today and it is AWESOME! I added some Garlic, Oregano, and Crushed Red Pepper to give it a little kick. SOOOOOOO GOOD! :-)
