Suggest a better descriptionIn large skillet brown turkey with onion and pepper. Add canned tomatoes and taco seasoning. Simmer uncovered 5 minutes. In bowl combine cottage cheese, 4 ounces cheddar cheese and eggs. Place 3 tortillas on bottom of a sprayed 8x12 baking dish. Spoon meat evenly over tortillas. Top with 3 tortillas then cheese mixture. Bake covered at 350 degrees for 40 minutes. Sprinkle remaining cheddar over top of lasagna and continue baking uncovered for 5 minutes or until cheese melts. Top with fresh tomatoes and lettuce right before serving.
