Apple cake with walnuts, raisins, and coconut. Secret ingredient: cold coffee!
In large bowl, combine first 4 ingredients until smooth.
In smaller bowl, sift together flour and spices. Combine with sugar, butter, eggs, and coffee.
Add walnuts, raisins, coconut, and apples to batter.
Bake at 350 for 1 hour or until tester comes out clean.
Makes 3 large loaf pans, or 2 Bundt or Angel food cake pans.
