Combine the water and the mushrooms. Set aside and let stand for 10 min. or until mushrooms are tender.
Heat oil in a large nonstick skillet over medium heat. Add onion, cook 1 min., stirring frequently. Add garlic, cooking for 30 seconds. Add barley, rice, and thyme; cook 5 min. or until lightly browned, stirring frequently. Stir in mushroom mixture and broth. Cover, reduce heat, and simmer 40 minutes or until barley is tender. Stir in chicken and cheese, cook 3 minutes. Add asparagus, steaming in pan, with lid on. Stir in parsley, salt & pepper.
When served w/ wild rice and porcini mushrooms, chicken breasts do not always need white wine. Try an easy drinking red wine, like a Pinot Noir.
