A quick simple breakfast.
Preheat skillet. Add 1 tablespoon vegetable oil to pan. Peel and cut potatoes, then place bacon in the skillet. Cook for about 7 to 9 minutes then turn the temp down. Cover the pan. Cook stirring occasionally for about 25 minutes. While the potatoes are cooking fry the bacon. When this is cooked, remove bacon from pan and place in paper towel to absorb grease. Break it and crumble then set aside. Use the same pan the bacon was cooked in to cook the eggs. Since it is turkey bacon there will be very little grease but it will help add flavor to the eggs. Beat eggs in a large bowl. Scramble in frying pan on med. high het. This should only take a couple minutes. Place one flour tortilla on a paper plate. Top with the scrambled eggs, bacon, and shredded cheese. Serve with potatoes.
