For egg topping, whisk eggs and milk. Season with salt mad pepper. Microwave on HIGH 3 minutes; stir. Microwave another 3 minutes and stir. Spread egg mixture over potatoes. Sprinkle remaining ingredients over eggs. Bake 10 minutes.
