Broccoli Cheese Casserole

8 cups broccoli; chopped
1 cup onion; chopped
2 tbls Butter
12 Eggs
2 cups whipping cream
2 cups Cheddar cheese; shredded
2 teaspoons salt
1 teaspoon pepper

Original recipe makes 4



In a skillet over medium heat saute broccoli and onion in butter for 5 minutes and set aside. In a large bpwl beat eggs and add whipping cream and 1 34 cups cheese. Stir into the broccoli mixture. Pour into greased baking dish ans sit into a larger baking dish with 1 inch of water in the bottom. Bake uncovered at 350 degrees for 45-50 minutes. Sprinkle with cheese and serve after 5 minutes.

I found that the consistency worked better for my crew with only four eggs. It was nice and smooth and not so cake-like. I also ended up using sweetened whipping cream once and it went over quite well, though personally I am not into sweet meals all that much

I'm not a big fan of eggs so I was sceptical about trying this recipe but I cut the ingredients in half and was pleasantly surprised in the outcome. It was more like a quiche,but very good...even reheated the next day. My husband and I loved it.
