Note from original author: Quinoa, an ancient grain, can be used in any recipe that calls for rice or couscous.
1. Preheat the oven to 400ºF.
2. In a small bowl, stir together the olive oil, apricot preserves & grainy dijon mustard. Set aside 3 tablespoons of the mixture for the quinoa.
3. Place the chicken in a roasting pan. Season with 1/4 teaspoon of the salt & 1/8 teaspoon of the pepper.
4. Bake in the preheated oven for 20 minutes.
5. Brush on the remaining mustard mixture & continue baking for an additional 15 to 20 minutes or until the internal temperature registers 170ºF on an instant read thermometer.
6. Remove the roasting pan from the oven & let it stand for about 5 minutes before serving.
7. While the chicken is cooking, make the quinoa dressing. Place the chicken broth, onion, celery, quinoa, the remaining 1/2 teaspoon of salt & 1/8 teaspoon of pepper in a medium-size saucepan. Bring to a boil, then reduce the heat to medium-low. Simmer, covered, for 15 minutes.
8. Stir in the dried apricots during the last few minutes of cooking time. Remove the saucepan from the heat & stir in the reserved 2 tablespoons of mustard mixture.
9. To Serve: Spoon the quinoa onto a serving platter & sprinkle with the toasted pine nuts. Place the chicken on top of the quinoa & serve.
