Flourless, rich dark and moist
Preheat oven to 180*C
Grease and line a 9" cake tin
Roast hazelnut for 10 mins until golden set aside to cool
Blitz with 25grams of sugar until finely ground
Melt the chocolate in a double boile
Cream the butter and sugar for 5 mins until pale and fluffy. Beat in the egg yolks one at a time, then the melted chocolate and salt. Fold in the hazelnuts.
Reduce the oven to 160
Whisk the egg whites to stiff peaks, whisk in remaining sugar
Fold one third of the whisked eggs into the cake mix, then fold the rest through
Carefully tip into the tin, level the top bake for 50-55 mins until just set
Cool in the tin for 20 mins
Choc sauce 150 grams dark choc, 100 ml double cream, 2 tablespoon light brown sugar, 25 grams unsalted butter
