Marinated chicken in Balsamic Vinegar overnight and Broil till done - slice to top on pasta.
Roast tomatoes drizzled with Balalmic vinegrette at 425 till split and cooked.
Toasted pine nuts (optional) To toast - put pine nuts in fry pan sprayed with Pam and heat on medium or low till just starting to turn brown - will take 15 mins or so (can do ahead).
Cook your pasta and chicken while you get the sauce together. Saute pancetta on medium or low heat - once it is nice and done - add mushrooms and saute till they are cooked down - at least 20 mins (this can also be done ahead) - add some butter to the pan if the pancetta does not make enough oil to saute the mushrooms well. Then add the roasted tomatoes, the alfredo sauce, the shredded Gouda and let this all melt down for a few mins - it will get thick. Add half and half till you get the thickness you want for your sauce - you do not want it too thick (and you can use heavy cream or milk for this - but do not use skim milk - you need some fat so that it blends with the cheeses) .
Then add the fresh spinach, cover the pan and let the spinach wilt - then stir and cook for another five minutes and serve with pasta, pine nuts and chicken
