Made this for the first time 10/30/13 from scratch recipe... a little spicy, especially for the kids, but pretty delicious!
First, heat the pan with Olive Oil before browning the ground turkey - so it won't burn.
I used the chopper to dice up all of the other ingredients: Onion, Jalapeno, Cilantro, Garlic, Zucchini
Cooked that up a bit and added the dry spices, Then added the beef stock and kept simmering to reduce.
I wanted to tone down the spice and add some red color, at which point I added the pizza sauce (which I just always have on hand). You could also add tomatoes or tomato paste or whatever you like to do the same.
I had to add quite a bit of cornstarch to thicken, but it turned out quite well. If I prepared early in the day & stuck in the crockpot, it would probably have plenty of time to reduce on it's own. This was fairly spicy, but still good (for me). A little too spicy for the kids, but less jalapeno would probably go a long way. Oh, and don't forget some cornbread to go along with it!
