Mix all the ingredients except the crab meat
Season with sea salt and white pepper
Gently toss in the crab meat
Portion the crab cakes into 2 oz portions
Bread each cake using panko bread crumbs
The mixture will seem to be too loose but will tighten up after breading
If mixture is too loose to work with add a small amount of panko bread crumbs at a time to soak up excess liquids
