Here is a way to sneak healthy ingredients into a delicious pastry that your family can grab on their way out the door in the morning.
Preheat oven to 400 degrees.
In a food processor with the blade attachment, add the first six ingredients. Pulse several times to incorporate the ingredients well. Add the Orange zest to the food processor and pulse several times more to blend the zest well. Add the well chilled butter and pulse until the mixture looks like course crumbs. Pour contents of processor into a large mixing bowl. Set aside.
In a seperate bowl, whisk together the milk and one egg. Pour this mixture into the large bowl of dry ingredients and combine with a wooden spoon. Mix in the orange juice and chopped cranberries until well combined. Pour out batter onto a well floured board and lightly knead. (You might have to knead more flour into your batter if it is too sticky.) Roll out to a 1/2 inch thickness, cut with a round cookie cutter to your desired size or cut with a knife into equal triangles. Place onto a well greased cookie sheet. Brush scones with the remaining egg ,whisked, and top with a sprinkle of raw sugar.
Bake for 15 to 20 minutes or until golden brown on top. Remove from oven and let cool for 5 to 10 minutes before transfering to a cooling rack to let cool completely.
I like to use orange flavored dried cranberries when I can find them in the store. Also, since oranges differ in size, you might get a very wet sticky batter from too much orange juice. If this happens, just add more flour to make it a workable bread type batter. And like a biscuit dough, don't over work it.
