1 29-oz can diced tomatoes
1 oz. condensed chicken broth; undiluted
2 tbsp. Margarine
2 tbsp. Sugar
1 tbsp. Onions; chopped
1/4 tsp. Baking soda
2 cups heavy whipping cream

Original recipe makes 8 Servings



In a large stock pot add tomatoes, chicken broth, margarine, sugar, onion and baking soda. Simmer for 1 hour. In a double boiler heat cream until hot. You can also use a small saucepan over low heat. Make sure the cream does not burn. Once heated, add to tomato soup and serve.


Creamy and tasty! This soup goes well with a slice of sourdough baguette!

Condensed chicken broth is a special product that you can find in stores, but if you cannot, you can substitute it by either boil down 1/2 cup of home made chicken broth down to 1/4 cup. You may need to add a little extra salt to taste at the end. Alternatively, you can use use 1 bouillon cube or 1 tsp of boullion mix to 1/4 cup of water. 1/4 cup is 2oz.

Was the 1 oz of broth a mistake?? Seems like it should be more?? I'm trying to cook this but 1 oz of broth makes no sense. Please answer.

Hi Kj35779. Condensed chicken broth is a lot stronger in flavor than regular chicken broth (and also quite salty) so you only need a little bit. It's used as a flavor boost here, and you already have enough liquid from the canned tomatoes and whipping cream for a good soup consistency. - Elizabeth Schneider 9m ago
