Low calorie but delicious!
Place carrots in a large crock pot.
In a bowl, combine preserves, brown sugar, butter, cinnamon, salt and nutmeg.
Stir well and then mix with carrots.
Cook on high for 4 hours or on low for 8 hours.
In a small bowl, mix cornstarch with 2 tablespoons cold water and stir until dissolved.
Add to crock pot and mix well.
Allow to thicken for 15 minutes before serving.
