Vegetable Sweet Potato Lasagna
Pre-heat oven 400 degrees
Saute' onions and mushrooms and set aside
Saute' broccoli and carrots add to the onions and mushrooms
Saute' corn and peppers add to the other veggies
Drain the tofu then break up in a paper towel and mix into veggies
Add spices to veggies
Bake and mash Sweet potato
Layer two layers with noodles, veggies and sauce
Third layer is spinach and sauce
Fourth layer is spinach and Sweet potato and sauce
Last layer of noodles then sauce then tomatoes
Cover with tin foil and cook 45 minutes
Remove tin foil and spread cashews and cook for 15 more minutes
