A favorite simple recipe my Mom used to make for me as a kid. I love it because it is simple to make as she worked full time and 30 minutes away as a nurse and could pull off this one fast.
Preheat oven 350 degrees. Spray 9x13 dish with Pam.
Stir together soup, beef broth, rice, mushrooms & diced onion in 9x13 dish. Add a dash of salt and pepper, watch the salt depending on what beef broth you use.
Lightly brown Pork chops in a skillet. Place them on top of rice along with the extra mushrooms
Cover and bake at 350 degrees until broth is absorbed in the rice.
Remove from oven, garnish with paprika and parsley if desired, let rest for 5 minutes before serving.
I've even added a bit of evaporated milk to the rice mixture for a creamy texture and kitchen bouquet to give it a richer color.
